Due to its reasonable price and versatility, chicken has been making a buzz in the foodservice industry recently. This Dijon sauce is made gluten-free and makes a perfect accompaniment to grilled chicken, or other proteins like fish or shrimp. The sauce can be made up to three days in advance if refrigerated, giving it an extended shelf life. Before creating a sauce or topping for a gluten-free dish, remember to check for hidden gluten in the ingredients… sometimes they are hard to find!

Gluten-free entrées should be cooked on a completely separate section of the grill than gluten-containing items. The same goes for all methods of cooking. If you do not have a separate space to cook or prep on, make sure the areas are cleaned thoroughly in order to avoid cross-contamination.
