The jibarito sandwich is rumored to have been invented by a Puerto Rican restaurant owner in Chicago during the ‘90s. This sandwich’s claim to fame is that the bread is not really bread at all but sweet, crispy fried smashed plantains. In between the plantains is a full-flavored meat like chicken, pork or steak, accented with fresh toppings, cheese and a mayonnaise dressing. The jibarito was not the first Latin American sandwich to be served on fried plantains, but it was certainly one of the first to hit mainstream menus in the U.S.
