Plantains are a very large, firm variety of the banana, and are typically cooked when green. Whether steamed, boiled, grilled, baked or fried, plantains add a mild flavor to an array of dishes. With their firm texture and low sugar content, plantains are often used as part of a main course yet their squash-like flavor makes them a common side dish, much like the potato. If allowed to ripen, they take on a slightly sweet flavor with a soft texture when cooked.
